Metal skewers are one of those tools you buy once and keep using. Unlike wooden ones, they don’t need soaking, don’t burn on the grill, and they’re sturdy enough to hold a heavy load of meat upright.
That last part is exactly why we use them for our Greek pork gyros: two skewers pushed into an onion base hold the whole stack of marinated pork slices together while it roasts. They’re also what we thread the lemon and oregano chicken onto for Greek chicken souvlaki.
Good for
- Souvlaki and kebabs on the grill or grill pan
- Building a homemade gyros stack in the oven
- Grilled vegetables and halloumi
Tip: thread the pieces snugly but not crushed together, so the heat can reach every side.
