A 23 x 33 cm baking dish is the size most layered Greek bakes are written for, and a glass one has a practical bonus: you can check the bottom and sides for colour without lifting anything out.
It is the dish we build our classic Greek moussaka in: a base of potato slices, roasted aubergine, the cinnamon-spiced beef sauce and a thick béchamel on top, baked at 180 °C until deep golden.
The same size works for Greek baklava. One standard pack of filo fits in layers, and the straight sides make it easy to cut clean diamonds before it goes into the oven.
Good for
- Moussaka, pastitsio and other layered oven dishes
- Baklava and tray bakes
- Roasted vegetables and gratins
Tip: let a moussaka rest for at least 30 minutes before cutting, so the layers hold together on the plate.
