This homemade Greek seasoning is a simple blend of dried oregano, thyme, mint, garlic, onion, paprika and black pepper. Keep a jar in the cupboard and you have the flavour of Greek grilled meat and roast potatoes ready in one spoonful.

Use it to season chicken souvlaki, lamb chops, roast vegetables, potatoes, salad dressings and even popcorn.

It takes five minutes, and you control the salt.

What Is Greek Seasoning?

Greek seasoning is a mix of dried Mediterranean herbs and spices built around oregano. Most blends add thyme, garlic and onion powder, black pepper and sometimes mint, dill, marjoram or paprika.

In Greece you are unlikely to see a jar labelled ‘Greek seasoning’. Cooks reach for dried oregano, salt, pepper, lemon and olive oil, and add other herbs depending on the dish.

This blend puts those flavours in one jar, which makes weeknight cooking quicker.

A Little History

Sprinkling homemade Greek seasoning over chicken thighs and potatoes in a roasting tin

Oregano, or rigani, is the herb most closely associated with Greek cooking. Greek oregano is a subspecies of wild oregano that grows on dry hillsides across the country and is known for its strong, peppery aroma.

Traditionally it is picked in summer, tied in bunches and dried in the sun, then rubbed between the hands straight onto food.

Ready-mixed ‘Greek seasoning’ blends became popular outside Greece as a shortcut to those flavours, and a homemade version is fresher and free of fillers.

Rubbing dried oregano, thyme, mint and parsley between the palms for Greek seasoning

1. Crush the herbs

Put the oregano, thyme, mint and parsley in a bowl and rub them between your palms to break them up slightly and release their aroma.

Stirring dried herbs with garlic powder, onion powder, paprika and pepper into Greek seasoning

2. Mix the blend

Add the garlic powder, onion powder, paprika, pepper and salt, if using. Stir well until evenly mixed.

Tip: Leave out the salt if you prefer to season each dish separately. It makes the blend more flexible.

3. Store

Transfer to a clean, dry, airtight jar. Label it with the date and keep it in a cool, dark cupboard.

Serving & Storage

Serving

Use about 1 tablespoon of seasoning for 500 g of meat, fish or vegetables, mixed with olive oil and lemon juice as a marinade.

Sprinkle it over roast potatoes, grilled halloumi or saganaki, stir it into Greek yoghurt for a quick dip, or add a teaspoon to a vinaigrette.

Storing Leftovers

Keep the jar tightly closed, away from heat and light.

Dried herbs slowly lose their aroma. If the blend no longer smells strong when you open the jar, it is time to make a new batch.
