Slata mechouia is a smoky Tunisian salad of grilled vegetables. Green peppers, tomatoes, onion and garlic are charred until blackened, peeled, chopped and dressed with olive oil, caraway and a little lemon.
It is served at room temperature, usually topped with tuna, hard-boiled egg and olives, and eaten with bread as a starter or alongside grilled fish and meat. We ate it with almost every restaurant meal during our winter in Tunisia.
It takes about 40 minutes and tastes even better after an hour.
What Is Slata Mechouia?
Slata means salad and mechouia means grilled. The vegetables are traditionally cooked over charcoal, which gives the salad its deep smoky flavour, but a gas flame, a grill pan or a hot oven grill all work.
Green peppers are the base, often with a few hot chillies. Tomatoes add sweetness, and onion and garlic grilled in their skins turn soft and mild. Everything is chopped together, by knife or in a mortar, until it is somewhere between a salad and a chunky dip.
The dressing is simple: good olive oil, salt, ground caraway and coriander, and sometimes a squeeze of lemon.
A Little History

Grilling vegetables over embers is an old technique across North Africa. Peppers and tomatoes came from the Americas, so slata mechouia as it is made today took shape over the last few centuries, alongside harissa.
In Tunisia it is one of the most common dishes on any table, from home kitchens to seaside fish restaurants. Topping it with tuna reflects how central canned tuna is in Tunisian cooking, from brik to sandwiches.
Today it is part of almost every Tunisian spread, especially in summer when peppers and tomatoes are cheap and full of flavour.

What You Need
Exact amounts are in the recipe card
For the Salad
- long green peppers, or 2 green bell peppers
- green chillies, to taste
- ripe tomatoes
- onion, unpeeled
- garlic cloves, unpeeled
For the Dressing
- extra virgin olive oil, plus extra to serve
- ground caraway
- ground coriander
- fine sea salt
- lemon juice
To Top
- tuna in olive oil, about 120 g, drained
- eggs, hard-boiled, quartered
- black olives, a handful
- capers, optional

Step-by-Step Instructions
Char everything well, let the steam loosen the skins, then chop. The blacker the skins, the smokier the salad.

1. Char the vegetables
Grill the peppers, chillies, tomatoes, onion and garlic directly over a gas flame, on a very hot grill pan or under a hot oven grill. Turn them with tongs until blackened and blistered all over: about 10 minutes for the peppers and tomatoes, 15 to 20 minutes for the onion until soft in the centre.
Tip: Pull the garlic out after about 5 minutes, once the skin is charred and the cloves feel soft.

2. Steam and peel
Put the hot vegetables in a bowl, cover and leave for 10 minutes. Peel off the blackened skins, remove the pepper stems and seeds, and squeeze the garlic out of its skin.
Tip: Don’t rinse the vegetables under the tap to remove the skins. You wash away the smoky flavour. A few black flecks are fine.

3. Chop finely
Chop the peppers, chillies, tomatoes, onion and garlic together on a board with a large knife until finely chopped but still a little chunky.

4. Season
Transfer to a bowl with any juices. Stir in the olive oil, caraway, coriander, salt and lemon juice. Taste and adjust, then leave for at least 15 minutes for the flavours to settle.

5. Top and serve
Spread the salad on a plate. Top with the tuna, egg quarters, olives and capers, and finish with a drizzle of olive oil.
Serving & Storage
Serving
Serve slata mechouia at room temperature with fresh bread as a starter, or as a side with grilled fish, lamb or brik. It also makes a great sandwich filling in a split baguette.
Leave the tuna and egg off for a vegan version and serve it as a dip.
Storing Leftovers
Keep the salad without toppings in an airtight container in the fridge, with a thin layer of olive oil on top. Bring to room temperature before serving.
